Shef D's Baked Tofu ~ Asian Style

Finally.  After five or six attempts at making tofu, Shef D hits the G spot for GOOD!  That's not on Shef D's official rating scale, but it's Monday night and he's looking for some light fun, with serious, good tasting food!  The Nah-Sayers are complimenting the chef on a job well done! "I don't think I've ever had tofu that I liked, but this is really good!" one diner commented.  So, here's the recipe!

First, get EXTRA FIRM TOFU...read the package and if it says good for grilling, that's the tofu for you!

Day 1 ~ Rinse the tofu and wrap it in a towel; set a plate on the top.  Cut the tofu into 1/2" cubes.

Mix the following in a quart size freezer, Ziplock bag:

  • 2 Tablespoons of Honey (warm 15 seconds in the microwave)
  • 2 Teaspoons of Minced Garlic
  • 1 Teaspoon of Ground Ginger
  • 1/4 Cup of Teriyaki Sauce
  • Fresh Ground Pepper (about 1/4 teaspoon or to taste)
Add the tofu cubes to the bag, squeeze out the air, and massage the marinade gently into the tofu cubes.  Place in refrigerator (Shef D plays with his food...every time he went into the refrigerator, he massaged the tofu...careful not to break the cubes...and flipped over the bag.

Day 2 ~ Take some fresh asparagus and make your favorite way.  Shef D likes to marinade it in extra virgin olive oil and some fresh pepper and then put it under the broiler for a few minutes.  He likes to sometimes substitute Grill Mates Steak Seasoning or various Mrs. Dash seasoning.  This is a quick side dish.  Also, cook your favorite rice.

As for the TOFU!!  Pre-heat the oven to 375 degrees, spray some non-stick oil on a cookie sheet, dump the tofu cubes on the cookie sheet and bake until golden brown.  What I learned is the tofu will burn on the cookie sheet side, so as it starts to brown, flip it.  I baked it for 20 minutes, but it still didn't show signs of browning or crisping, so I set the timer at 5 minute increments, and flipped the tofu at the 5 minutes.  It was done at 35 minutes.  Don't just stick the tofu in the oven and set the timer for 35 minutes!  It will burn on the bottom.

Serve the tofu when it is golden brown with rice and asparagus...big time YUM and Healthy!!!!!
